- 1 Cup Palm sugar syrup
- 2 Tablespoons arrowroot flour
- 2 tablespoons agave inulin (optional, this is a fiber that helps decrease glycemic index)
- 2 TBSP pure maple syrup
- ¼ tsp sea salt
- 2 large eggs
- 1 teaspoon pure vanilla extract
½ cup halved pecans
Pie crust: you can buy a pre-made or for a great gluten free recipe use Elena’s pantries almond flour recipe.
Pre-heat oven 350
Place first seven ingredients into mixer (everything except pecans). Mix well.
Fold pecans into the mix and pour into piecrust.
Bake for 50 minutes.
(Quick tip: Watch for the piecrust, if you notice it get too brown you may want to keep the edges covered.)
It may appear a little soft, as the pie cool it will harden.
